Preheat the oven to 400°F. Meanwhile heat a sauté pan over medium-high heat.
Once the pan is hot, place the chicken skin-side down and press with a pan or weight to encourage even browning.
When a crispy crust has formed on the skin, remove the weight and flip the chicken.
Transfer the pan to the oven and cook until the internal temperature reaches 165°F.
In a bowl, toss all salad ingredients until well combined.
Plate the salad and place the cooked chicken on top.
