Creamy Truffle Caesar Proscuttio Wrapped Chicken Salad

Ingredients
  

  • 1 (9.3-ounce) package Fresh Express® Twisted Caesar Creamy Truffle Caesar Chopped Salad Kit™
  • 2 8oz boneless skinless chicken breasts
  • 4 thin slices prosciutto
  • 1 half lemon
  • 1/4 cup white wine 
  • 1 cup chicken broth
  • 1/2 cup all-purpose flour
  • 2 sprigs fresh oregano removed from stem
  • 2 teaspoons ground black pepper
  • 1 teaspoon salt
  • Juice from half of a lemon
  • 3 tablespoons neutral oil 

Instructions
 

  • On a cutting board, slice the chicken breasts horizontally to create a total of 4 pieces. Season them with black pepper and oregano.
  • Preheat oven to 350°.
  • Lay down the prosciutto slices and wrap each piece of chicken inside.
  • In a bowl, add 1/4 cup of all-purpose flour. Heat a sauté pan over medium heat and add oil.
  • Lightly coat both sides of the chicken with flour, then place the chicken in the hot pan. Sear until both sides are crispy.
  • Transfer the chicken to the oven and bake for 10 minutes, or until the internal temperature reaches 165°F.
  • Remove the chicken from the oven and let it rest while you prepare the sauce.
  • In the same pan, add the remaining flour to make a roux. Cook for about 3 minutes, stirring constantly, until it develops a blonde color.
  • Add the lemon juice, white wine, and chicken stock to the roux. Whisk thoroughly until the sauce is smooth and free of lumps.
  • Simmer the sauce for 4 minutes, or until it reaches your desired consistency.
  • Meanwhile, mix together the salad, toppings, and dressing in a bowl.
  • Serve the chicken with the sauce, pair it with the salad, and enjoy!
