Ingredients
- 2 (5-ounce) packages Fresh Express® Spinach & Arugula
- 8 cups watermelon, cut into 3/4-inch cubes
- 1 (8-ounce) package feta cheese chunk, cut into ½-inch cubes
- 2 cups blueberries
Lime Mint Vinaigrette Ingredients:
- 2/3 cup olive oil
- Zest from 1 lime
- 1/2 cup lime juice
- 2 tablespoons honey
- 3 tablespoons mint leaves, minced
- 1/4 teaspoon salt
Instructions
- Arrange the Fresh Express® Spinach & Arugula on a large rectangular platter.
- Place the blueberries in the upper left corner, creating a 4-inch square. Be sure to have enough spinach underneath to keep the berries from rolling off the edge.
- Arrange the watermelon and feta in alternating rows, beginning and ending with watermelon. There will be three rows of watermelon and two rows of cheese.
- Serve the salad with Lime Mint vinaigrette on the side.
Lime Mint Vinaigrette Instructions:
- Whisk all ingredients in a small bowl.
