Ingredients
- 1 (5-ounce) package Fresh Express® Spring Mix
- 32 ounces cranberry juice
- 1/4 cup sugar
- 1 cinnamon stick
- 4 ripe Bosc pears, peeled, stem intact
- 2 star fruit, thinly sliced
- 1/3 cup honey glazed almonds, chopped
- Pear Gorgonzola dressing or Raspberry Vinaigrette
Instructions
- Bring the cranberry juice, sugar, and cinnamon stick to a boil in a large saucepan over medium-high heat; boil for 3 minutes or until the sugar dissolves. Reduce heat to a simmer; place the pears into the saucepan. Cook, covered, for 20 minutes or until the pears are tender, turning occasionally. Remove the saucepan from the heat and set aside to cool to room temperature. Turn the pears a few times as they cool in the liquid so that the color remains even.
- Divide Fresh Express® Spring Mix evenly among 4 salad plates. Top each salad with a poached pear and star fruit. Sprinkle with almonds and drizzle with dressing.
Notes
Tip: Pears can be pouched the day before and stored in the refrigerator.
Note: Star fruit, also known as carambola or 5 fingers, is a sweet and sour fruit that has the shape of a five-point star when cut in cross-section. The entire fruit is edible, including the slightly waxy skin. It is cultivated in tropical areas of the world as well as in Florida. Look for it at your local grocery store or specialty fruit markets.
