Ingredients
- 2 (9.5-ounce) packages Fresh Express® Twisted Pesto Caesar Chopped Salad Kits®
- 1 pound boneless skinless chicken breasts
- 1/4 teaspoon salt
- 1/4 cup sun-dried tomatoes, chopped
- 2 large avocados, peeled, pitted, cut into ¼-inch-thick slices
Instructions
- Place chicken breasts in a saucepan; cover with cold water. Bring to a boil over medium-high heat; reduce heat to low. Cover and cook for 10 to 12 minutes or until a thermometer inserted into the thickest part of the chicken reads 165° F. Transfer to a bowl; shred with two forks. Cool.
- Drizzle the chicken with one packet of the dressing and the salt; mix well. Add the sun-dried tomatoes; mix well.
- Place the greens from the Fresh Express® Twisted Pesto Caesar Chopped Salad Kits® into a bowl; toss with the remaining salad dressing. Add the toppings; toss to combine.
- Divide the salad evenly among four plates. Top with chicken salad and avocado slices.
