Grilled Zucchini Nachos
Indulge and pile on the toppings with low-carb nachos made with grilled zucchini chips! These vegetable nachos are a healthy dinner idea that the whole family will love, kids included. Perfect for game day or as a light snack, these grilled zucchini nachos are a delightfully tasty alternative to traditional nachos.
Ingredients
- 1 (5-ounces) package Fresh Express® Sweet & Crunchy Salad Blend
- 4 medium Zucchini, sliced into 1/4 inch thick rounds
- salt and pepper to taste
- 1 tablespoon Extra Virgin Olive Oil
- 1 cup canned corn, cooked and drained
- 1 cup canned black beans, rinsed and drained
- 1 cup cheddar cheese, shredded
- 1 cup tomato, diced
- 1/4 cup green onions
- 1/4 cup red onions
- 1 jalapeno, finely diced (optional)
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1 tablespoon sour cream
Instructions
- Heat grill to medium heat.
- In a large bowl, toss the zucchini with olive oil until evenly coated. Season with salt and pepper.
- Place the zucchini on a grill pan, grill 4-5 minutes until just tender. Sprinkle with cheese and continue grilling for 1-2 minutes, or until the cheese melts.
- Transfer the cheesy grilled zucchini to a plate or large platter. Top with Fresh Express® Sweet & Crunchy Salad Blend, black beans, corn, tomatoes, red and green onions, jalapeño, avocado, cilantro, and a dollop of sour cream.
- Serve and enjoy!
