Chicken Enchilada Salad
Zesty enchilada sauce flavors our Lettuce Trio, along with shredded chicken, cheese, avocado and cucumber.

Servings 4 people
Ingredients
- 1 package Fresh Express Lettuce Trio
- 1 avocado sliced
- 1 basket cherry tomatoes cut in half
- 1 cucumber cut into small cubes
- 1 cup mixed yellow and white cheese grated
- 2 green onions sliced thinly
- 2 chicken breasts cooked to internal temp of 165 degrees F, and hand-shredded
- 1/2 cup canned enchilada sauce
- Your favorite creamy Ranch or Buttermilk dressing
Instructions
- In a separate bowl, toss chicken with enchilada sauce.
- Set aside for 10 minutes.
- Empty greens into a large salad bowl.
- Add in tomatoes, cucumber, avocado and green onions, and toss together.
- Place mixed salad onto four individual plates.
- Top the salad with the enchilada chicken.
- Sprinkle 1/4 cup cheese on top of each salad.
- Drizzle on your favorite creamy dressing.
