Balsamic Mozzarella Valentine’s Day Salad
It’s easy to make this special salad for Valentine’s Day dinner or any special occasion.
Ingredients
- 1 (5-ounce) package Fresh Express® 50/50 Mix®
- 40 each cherry tomatoes
- 1 (8-ounce) package fresh mozzarella cheese log
- 1/4 cup balsamic glaze
Instructions
- To make the cherry tomato hearts, slice each tomato at a 45-degree angle; place the two cut sides together creating a heart. Secure with a frilly or tulip toothpick.
- To make the mozzarella cheese hearts, cut the cheese into 3/8-inch thick slices. Cut the slices using a 1-1/2-inch heart-shaped cookie cutter.
- To assemble the salad, divide the Fresh Express 50/50 Blend among 4 salad plates. Top each salad with 5 cherry tomato hearts and 5 mozzarella cheese hearts. Drizzle with balsamic glaze.
- Tip: An easy way to apply the balsamic glaze is to pour it in a sandwich bag, snip the corner and drizzle.
