Cinco de Mayo Enchilada Caesar Mini Tostadas with Chipotle Potatoes

Ingredients
- 1 (9.6-ounce) package Fresh Express® Twisted Enchilada Caesar Chopped Salad Kit®
- 3 red potatoes
- 1/2 red onion small diced
- 1 tbsp salt
- 2 tsp black pepper
- 2 tbsp diced chipotle peppers in adobo
- 2 tbsp unsalted butter
- 2 tbsp neutral oil
- Juice from half of a lime
Instructions
- In a medium pot, bring water to a boil. Add the diced red potatoes and a pinch of salt. Cook until fork-tender, about 8-10 minutes. Drain and set aside.
- In a large skillet over medium heat, add the neutral oil and butter. Once melted, add the diced red onion and cook until softened, about 3 minutes.
- Add the boiled potatoes to the skillet and season with salt, black pepper, and chipotle peppers in adobo. Stir well to coat the potatoes in the seasoning and cook for another 5-7 minutes, allowing them to develop a crispy, golden-brown texture. Remove from heat and squeeze in fresh lime juice.
- Arrange the Fresh Express® Twisted Enchilada Caesar Chopped Salad Kit® ingredients in a bowl, tossing the salad mix with the included dressing, cheese, and tortilla strips.
- Place a spoonful of the chipotle potatoes on mini tostada shells (or crispy tortillas).
- Top each with a generous portion of the prepared Enchilada Caesar salad.
- Garnish with extra tortilla strips from the salad kit for extra crunch.
