Ingredients
  

  • 2 (9-ounce) packages Fresh Express® Hearts of Romaine Lettuce
  • 1 pound whole wheat pasta
  • 2 cups packed fresh basil leaves
  • 1/2 cup packed flat-leaf parsley leaves
  • 1/2 cup chopped walnuts, toasted
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup olive oil
  • 2 plum tomatoes, chopped
  • 1 (12-ounce) jar roasted red pepper, drained, diced

Instructions
 

  • Cook pasta according to package directions; drain and rinse with cold water. Transfer to a large bowl.
  • Combine basil, parsley, walnuts, Parmesan, garlic, lemon juice, salt and pepper in a food processor. Pulse, scraping down side as necessary, until finely chopped. With processor running, slowly drizzle in oil. Add the pesto, tomato, and peppers to the pasta; toss to coat.
  • Arrange Fresh Express® Hearts of Romaine Lettuce on four plates; top with pasta.
