Combine leftover turkey or chicken with prepared coconut curry sauce and vegetables and serve it with the Fresh Express® Thai ‘N’ Cashews Chopped Kit® to make a delicious and easy Thai meal.

Ingredients
- 2 (11.7-ounce) packages Fresh Express® Thai ‘N’ Cashews Chopped Kits®
- 1-1/2 cups prepared coconut curry sauce
- 3 cups chopped cooked turkey or chicken breast
- 2 cups frozen green peas and carrots thawed
- 2 cups cooked jasmine rice
Instructions
- Combine the coconut curry sauce, turkey, peas and carrots in a medium-sized saucepan. Cook, covered, over medium heat for 5 to 8 minutes or until heated through.
- Place the greens from the Fresh Express® Thai ‘N’ Cashews Chopped Kits® into a large bowl; toss with salad dressings. Add toppings; toss to combine.
- Place rice down the middle of the bowls; top with turkey curry. Arrange the Thai ‘N’ Cashews salad on both sides of the turkey curry.
Notes
Look for prepared Coconut Curry Sauce in the Asian aisle at your local retailer.
