Grilled Scallop Lemon Caesar Salad
A refreshing combination—grilled scallops and apricots served on the Fresh Express® Twisted Lemon Caesar Chopped Salad Kit™.
Ingredients
- 2 (9.1-ounce) packages Fresh Express® Twisted Lemon Caesar Chopped Salad Kits™
- 1/4 cup melted butter
- 1 tablespoon fresh lemon juice
- 4 apricots, cut in half, pitted
- 1 (12-ounce) package sea scallops
Instructions
- Heat an outdoor or indoor grill to medium; oil the grill grate.
- Combine the butter and lemon juice in a large bowl. Toss apricots with the butter mixture.
- Grill apricots, cut side down, for 2 minutes or until there are dark grill marks.
- Toss scallops with the butter mixture. Thread scallops onto skewers or use a wire grill basket.
- Grill scallops for 3 to 4 minutes a side or until golden brown and translucent in the center.
- Place the lettuce from the Fresh Express® Twisted Lemon Caesar Chopped Salad Kits™ into a large bowl; toss with the salad dressings. Add the toppings; toss to combine.
- Divide the salad evenly among four plates. Top with apricots and grilled scallops.
Notes
Sea scallops are a larger size than bay scallops. You can find them in the frozen seafood section at your local retailer.
