Greek-Style Pork Kabobs
These Greek-Style Pork Kabobs are worth firing the grill for! Made with Fresh Express® Twisted Greek Caesar Chopped Salad Kit™, it’s a delicious twist on a classic Caesar, that will instantly transport you to a Greek taverna.
Ingredients
- 3 (9.3-ounce) packages Fresh Express® Twisted Greek Caesar Chopped Salad Kits™
- 1-1/2 pounds pork loin, trimmed of silver skin, cut into 1-inch cubes
- 1 large green pepper, cored, seeded, cut into 1-inch wide pieces
- 1 large red onion, peeled, cut into quarters
- 4 pocket-less pita bread
Marinade
- 1/2 cup olive oil
- 2 garlic cloves, minced
- 1/4 cup fresh lemon juice
- 2 tablespoons red wine vinegar
- 3 teaspoons oregano
- 2 teaspoons thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Mix the marinade ingredients together in a small bowl. Transfer to a large resealable plastic bag; add the pork and toss to coat. Refrigerate for at least two hours, or overnight, turning the bag once or twice. Remove the pork and discard the marinade.
- Heat an outdoor or indoor grill to high; oil the grill grate. Meanwhile, thread the pork onto the skewers alternating with pieces of green pepper and red onion. Grill pork on high to sear on two sides. Reduce heat to medium; grill the pork for 8 to 10 minutes, turning often, until the internal temperature reaches 145°F to 160°F.
- Grill the pita until lightly browned on both sides, about 1 minute per side.
- Place the Fresh Express® Twisted Greek Caesar Chopped Salad Kits™ into a large bowl; toss with the salad dressing. Add the toppings; toss to combine.
- Serve the grilled pita topped with the Fresh Express® Twisted Greek Caesar Salad and the pork kabob.
Notes
If using wooden skewers, soak them in water for about 20 minutes.
