Ingredients
- 1 (9.3-ounce) package Fresh Express® Twisted Caesar Creamy Truffle Caesar Chopped Salad Kit™
- 2 8oz chicken breasts
- 4 oz sliced mozzarella
- 1 cup marinara sauce
- 1 cup seasoned bread crumbs
- 2 eggs beaten
- 1/2 cup All-Purpose flour
- 1/2 cup grated parmesan cheese
- 1 cup neutral oil
Instructions
- Place chicken breasts on a cutting board and slice horizontally to create 2 equal pieces.
- Place the chicken under cling wrap and pound to 1/2-inch thickness.
- Mix the grated parmesan into the breadcrumbs.
- Prepare 3 shallow bowls: add flour to the first, beaten eggs to the second, and the breadcrumb mixture to the third.
- Dredge each chicken piece in flour, then dip in eggs, and finally coat with breadcrumbs.
- In a high-sided sauté pan, add oil and heat to 350°F (or the medium/4th mark on your stove).
- Gently place the chicken in the pan to avoid splashing. Fry until golden brown on both sides and the internal temperature reaches 165°F (about 10 minutes).
- Repeat with remaining chicken until all cutlets are cooked.
- Place the chicken cutlets on a sheet tray, top with marinara sauce and sliced mozzarella, and place under the broiler until the cheese is melted.
- Toss salad in a bowl, top with the cooked chicken cutlets, and serve.
