This Thai-inspired dressing makes a flavorful topping for a chicken noodle salad with crunchy vegetables.

Makes 1 cup

  • 1/3 cup creamy peanut butter
  • 3 tablespoons olive oil
  • 2 tablespoons unseasoned rice vinegar
  • 2 tablespoons lime juice
  • 2 tablespoons minced fresh ginger
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons honey
  • 4 teaspoons soy sauce
  • 3 teaspoons chile garlic sauce
  • 1/2 teaspoon salt

Instructions
 

  • Process all ingredients in a blender until smooth; transfer to a bowl. Cover and refrigerate for 30 minutes to allow flavors to develop. Refrigerate dressing for up to two weeks.
