Air Fryer Ground Chicken Egg Roll
These crowd pleasing, crispy, veggie-packed air fryer egg rolls are so scrumptious and incredibly easy to make. And making them in an air fryer is much healthier than deep frying them. Serve as a side or as a snack to satisfy your cravings. Deliciousness awaits!
Ingredients
- 1 bag (16.7-ounces) Fresh Express® Asian Sweet Ginger Hot or Cold Salad and Noodle Meal Kit
- 1 pound ground chicken
- 2 tablespoons fresh grated ginger
- 2 tablespoons fresh garlic
- 1 tablespoon soy sauce
- 1 tablespoon neutral oil
- 20 egg roll wrappers
- 1 egg, whisked
Instructions
- Heat a large sauté pan over medium-high heat and add oil.
- Add ginger and garlic and cook for 20 seconds while stirring rapidly.
- When ginger and garlic are fragrant, add the ground chicken to the pan. Cook, breaking it apart with a spatula, until fully cooked through.
- Stir in the soy sauce and continue cooking for 10 minutes, or until the chicken is fully cooked and evenly coated.
- Once the chicken is fully cooked, remove it from the pan and set aside.
- In a separate bowl, prepare the Fresh Express® Asian Sweet Ginger Hot or Cold Salad and Noodle Meal Kit® according to the package instructions as a cold meal. Add the cooked ground chicken to the prepared salad and mix until well combined.
- On a cutting board, lay an egg roll wrapper flat with one tip pointing toward you. Working one at a time, brush the edges of the wrapper with the whisked egg. Place 1 tablespoon of filling in the center, fold the left and right edges toward the middle, then fold the bottom tip over the filling. Roll the wrapper tightly away from you, like a burrito, to seal. Repeat with the remaining wrappers and filling.
- Preheat air fryer to 400°F and lightly coat the basket with non-stick spray. Working in batches, arrange the egg rolls in a single layer in the air fryer basket. Spray the tops of the egg rolls with non-stick spray and air fry for 10 minutes, flipping halfway through, until golden and crispy.
- Transfer the cooked egg rolls to a baking sheet and place them in a preheated oven at 250°F to keep warm and maintain their crispiness while finishing the remaining batches.
- Once all the egg rolls are cooked, serve them warm and enjoy!
