Southwest Black Bean Burger with Avocado Salad Topping
Serve this delicious black bean burger topped with the Fresh Express® Twisted Avocado Caesar Chopped Salad Kit™ or with no bun on top of the salad.
Ingredients
- 2 (9.7-ounce) packages Fresh Express® Twisted Avocado Caesar Chopped Salad Kits™
- 8 ounces mushrooms, finely chopped
- 1/2 cup red onion finely chopped
- 2 tablespoons canola oil, divided
- 2 cloves garlic, minced
- 1 jalapeño pepper, seeded and finely chopped
- 1 egg
- 2 teaspoons Worcestershire sauce
- 1 can black beans, rinsed and drained
- 6 tablespoons bread crumbs
- 1/4 cup fresh cilantro minced
- 4 whole wheat buns
Instructions
- Cook the mushrooms and onion in 1 tablespoon canola oil in a skillet over medium heat for 5 minutes or until tender. Add garlic and pepper; cook for 2 minutes.
- Whisk egg and Worcestershire sauce in a large bowl; add black beans. Mash beans with a fork, until almost all beans are mashed. Add mushroom mixture, bread crumbs and cilantro; mix well. Shape into four 4-inch diameter 1/2-inch-thick patties. Refrigerate for 30 minutes.
- Cook burgers in remaining 1 tablespoon canola oil in a skillet over medium heat for 5 minutes a side or until heated through. Reduce heat if the patties are browning too quickly.
- Place the Fresh Express® Twisted Avocado Caesar Chopped Salad Kits™ into a large bowl; toss with the salad dressing. Add the toppings; toss to combine.
- Serve burgers on buns topped with the Twisted Avocado Caesar Chopped Salad Kit™; add ketchup, mayonnaise, etc. as desired.
Notes
Tip: You can also serve the Black Bean Burgers on top of the Twisted Avocado Caesar Chopped Salad Kit®. Just add some tomatoes and pickled red onions for a delicious entrée salad.
