Ingredients
- 1 (24-ounce) package Fresh Express® 3 Color Coleslaw™
- 16 shrimp, peeled and deveined
- 2 red jalapeño peppers, cored, seeded, sliced
- 1 tablespoon olive oil
- 1/4 cup chopped fresh cilantro
- 2 tablespoons chopped mint leaves
- 1/4 cup unsalted, roasted peanuts, chopped
Dressing Ingredients:
- 1 1/2 cups coconut milk
- 1 cup unsalted, roasted peanuts
- 1/2 cup seasoned rice vinegar
- 1/4 cup unsweetened flaked coconut
- 2 tablespoons brown sugar
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon reduced-sodium soy sauce
- 1 clove garlic
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Stir fry shrimp and peppers in olive oil in a large skillet over medium heat for 5 minutes or until they are pink.
- Combine the Fresh Express® 3 Color Coleslaw™, cilantro, and mint in a large bowl. Drizzle with Thai peanut dressing; toss to coat.
- Divide slaw evenly into four bowls; top each with four cooked shrimp and peppers. Sprinkle with peanuts.
Dressing Instructions:
- Process all ingredients in a blender until smooth.
