Creamy Truffle Caesar Proscuttio Wrapped Chicken Salad

Ingredients
- 1 (9.3-ounce) package Fresh Express® Twisted Caesar Creamy Truffle Caesar Chopped Salad Kit™
- 2 8oz boneless skinless chicken breasts
- 4 thin slices prosciutto
- 1 half lemon
- 1/4 cup white wine
- 1 cup chicken broth
- 1/2 cup all-purpose flour
- 2 sprigs fresh oregano removed from stem
- 2 teaspoons ground black pepper
- 1 teaspoon salt
- Juice from half of a lemon
- 3 tablespoons neutral oil
Instructions
- On a cutting board, slice the chicken breasts horizontally to create a total of 4 pieces. Season them with black pepper and oregano.
- Preheat oven to 350°.
- Lay down the prosciutto slices and wrap each piece of chicken inside.
- In a bowl, add 1/4 cup of all-purpose flour. Heat a sauté pan over medium heat and add oil.
- Lightly coat both sides of the chicken with flour, then place the chicken in the hot pan. Sear until both sides are crispy.
- Transfer the chicken to the oven and bake for 10 minutes, or until the internal temperature reaches 165°F.
- Remove the chicken from the oven and let it rest while you prepare the sauce.
- In the same pan, add the remaining flour to make a roux. Cook for about 3 minutes, stirring constantly, until it develops a blonde color.
- Add the lemon juice, white wine, and chicken stock to the roux. Whisk thoroughly until the sauce is smooth and free of lumps.
- Simmer the sauce for 4 minutes, or until it reaches your desired consistency.
- Meanwhile, mix together the salad, toppings, and dressing in a bowl.
- Serve the chicken with the sauce, pair it with the salad, and enjoy!
