Roasted Cauliflower and Potato Spinach Salad

Ingredients
- 1 (8-ounce) package Fresh Express® French Blue Cheese Salad Kit
- 1 small head cauliflower, cut into florets
- 1 pound fingerling potatoes, quartered
- 3 tablespoons olive oil, divided
- 2 teaspoons Italian seasoning, divided
- 1/2 teaspoon salt, divided
Instructions
- Heat oven to 425°F.
- Toss cauliflower florets with 2 tablespoons olive oil in a large bowl. Sprinkle with 1 teaspoon Italian seasoning and 1/4 teaspoon salt; mix well. Arrange in a single layer on a sheet pan.
- Bake cauliflower for 30 to 40 minutes, tossing once halfway through, until tender and lightly charred. Cool.
- Toss potatoes with 1 tablespoon olive oil in a bowl. Sprinkle with 1 teaspoon Italian seasoning and ¼ teaspoon salt; mix well. Arrange in a single layer on a sheet pan.
- Bake potatoes for 20 minutes, until tender and lightly browned. Cool.
- Place the greens from the Fresh Express® French Blue Cheese Salad Kit into a large bowl; add the roasted vegetables. Drizzle with dressing; mix well. Top with croutons and blue cheese.
