Tex Mex Tortilla Egg Casserole
This colourful dish is even more delicious when served with the Fresh Express® Twisted Caesar Enchilada Caesar Chopped Kit® .
Ingredients
- 2 (9.6-ounce) packages Fresh Express® Twisted Enchilada Caesar Chopped Salad Kits®
- 6 eggs
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups shredded Mexican cheese blend
- 1/4 cup chopped cilantro
- 1 plum tomato, diced
- 1 cup black beans, rinsed and drained
- 6 ounces cooked chorizo sausage
- 4 cups tortilla chips
Instructions
- Heat oven to 400°F. Spray a 13x9x2-inch baking dish with cooking spray.
- Mix eggs, milk, salt, and pepper in a large bowl until smooth. Stir in cheese and cilantro.
- Add tomato, black beans, sausage, and tortilla chips; toss to coat.
- Transfer mixture to the prepared baking dish; cover with foil.
- Bake for 40 minutes or until eggs are set. Remove foil and cook for an additional 5 minutes or until the chips are lightly browned.
- Place the greens from the Fresh Express® Twisted Enchilada Caesar Chopped Salad Kits® into a large bowl; toss with the salad dressings. Add the toppings; toss to combine.
- Top the casserole with the salad.
