Tender Greens & Pistachios over Couscous

Try our Sweet Tender Greens over squash and couscous, with a fresh, citrus vinaigrette. Serves 6
Salad Ingredients
1 pkg Fresh Express® Sweet Tender Greens
1/4 cup shelled pistachios, broken into pieces
3 oz feta cheese
Couscous Ingredients
1 box couscous, cooked as on box
1 zucchini, 1/4” dice
1 yellow crookneck squash, 1/4” dice
1 small white onion, 1/4” dice
1 carrot, peeled & 1/4” dice
3 cloves garlic, minced
1/4 tsp red chili seasoning
1/4 cup light olive oil
1 tsp salt
1 tsp ground black pepper
Dressing Ingredients
Juice of 1 fresh orange
Juice of 1 fresh lime
2 Tbsp rice vinegar
1 clove garlic, minced
2 Tbsp honey
1 Tbsp Dijon mustard
1 tsp salt
1 tsp ground black pepper
1/2 cup extra virgin olive oil
Make the Dressing
Using a food processor or hand mixer, mix all ingredients except oil.
After ingredients are well mixed, add oil slowly in a steady stream.
Add salt & pepper to taste.
Make the Couscous
Cook couscous per instructions on box.
In a medium saucepan, sauté veggies for 4 minutes.
Turn off heat. Add seasonings, adjusting salt & pepper to taste.
Fold cooked, seasoned veggies into cooked couscous.
Set aside to let couscous mixture cool to lukewarm.
Make the Salad
In a large salad bowl, place greens.
Drizzle with desired amount of dressing & toss greens.
Serve couscous mixture onto 6 individual salad dishes, spreading to an even layer.
Serve greens over top of couscous mixture.
Garnish each individual salad with pistachios & feta cheese.
