Spinach-Slaw with Red Peppers & Cranberries

This salad starts with two great flavors and textures – our tender Baby Spinach leaves, mixed with the crunch and lightly peppery taste of Angel Hair cabbage. Add in the sweetness of red peppers and cranberries, and a little bites of savory pine nuts – enhanced with a sweet light citrus vinaigrette. Serves 4
Salad Ingredients:
1/2 pkg Fresh Express® Baby Spinach
1/2 pkg Fresh Express® Angel Hair Cole Slaw
1 red bell pepper, cut into thin julienne slices
1/3 cup dried cranberries
1/3 cup toasted pine nuts
Your favorite citrus vinaigrette dressing

Dressing Ingredients:
2 Tbsp freshly squeezed juice from one orange
1 Tbsp rice wine vinegar
2 Tbsp olive oil
Salt & pepper
Make the Dressing:
Whisk all ingredients together.
Add a dash of salt and pepper, to taste.

Make the Salad:
Toss all ingredients together.
Just before serving, drizzle on dressing and quickly toss.
