Spinach Salad with Tomatoes, Brown Rice, Mushrooms & Rosemary Vinaigrette

Brown rice adds a satisfying nutty flavor and whole grain goodness to this delicious & nutritious spinach salad. Serves 4
1 bag Fresh Express Spinach & Tomatoes salad
2 Tbsp. extra-virgin olive oil
2 fresh rosemary sprigs
1 garlic clove, minced
2 Tbsp. red wine vinegar
1/2 tsp. sugar
Coarse salt and ground pepper
1 ½ cups cooked brown rice
2 cups sliced white mushrooms
1/2 cup slivered red onion
1/2 cup grated Asiago or Parmesan cheese

Dressing: In a large sauté pan, heat together oil, rosemary and garlic over medium heat till garlic is a light golden brown. Remove from heat and add vinegar, sugar, a pinch of salt and pepper and whisk well to incorporate, remove and discard  the rosemary sprigs.

Place Fresh Express Spinach and Tomatoes salad in a large bowl.  Add rice, mushrooms and red onions. Drizzle dressing on salad and toss.  Serve salad with a sprinkling of grated Asiago cheese.
