Savory Spinach Wedges

Asiago cheese, sundried tomatoes, onion and eggs are baked with our Spinach on a breadcrumb crust. Serves 6 to 8
1 pkg Fresh Express® Spinach, chopped
1/2 cup bread crumbs
1 Tbsp butter or margarine, melted
1 Tbsp grated Asiago cheese
1/2 cup chopped sundried tomatoes
1/2 cup finely chopped onion
4 eggs
3 8-oz pkgs. cream cheese, softened
1/2 tsp ground nutmeg
1/4 cup half and half
1/4 cup beer
Make the Crust:
Preheat oven to 350¢ª F.
Grease 8¡± springform pan with butter.
In a small bowl, combine bread crumbs, melted butter, & Asiago; mix thoroughly.
Press onto bottom of prepared springform pan.
Bake for 8 minutes.
Remove from oven and reduce temperature to 300¢ª F.

Make the Spinach Mixture:
Place greens into a large bowl.
Microwave for 2 minutes.
In a large mixing bowl, combine cream cheese, eggs, nutmeg, half & half, with beer.
Beat until light and fluffy.
Add spinach, sundried tomatoes, & onion.
Pour into prepared crust and bake for 1 1/2 hours.
Turn off oven and leave door ajar.
Cool pan in oven for 1 hour.
Refrigerate for 3 hours.
Remove from pan and cut into wedges.
