4 spears of fresh pineapple, cut into 1" chunks
16 large sea scallops, washed and dried
¼ cup teriyaki sauce
½ tbsp crushed red pepper flakes
Make the Salad:
Cut pineapple spears into 1" chunks. Toss scallops, pineapples, teriyaki sauce and crushed red pepper flakes together in a large bowl and marinate for ½ hour to 1 hour. Place 4 pineapple chunks and 4 scallops on each skewer and grill over medium heat for 6-8 minutes or until scallops are cooked through. Use 1-2 heads of lettuces from the 4-pack. Wash the lettuces and spin-dry or pat dry. Divid lettuces between 4 plates and place skewer on each salad. Dress with vinegar and olive oil. Salt and pepper to taste.
