Bacon and Bleu Sliders

Fire up the grill and get these sliders searing. Spice up ground bison with paprika, chili and garlic powder, pickle your own red onion and top these juicy patties with our Bacon and Bleu Chopped Salad Kit. Better double the recipe because these are sure to be a crowd favorite. Serves 6-8
3 shallots, sliced thin
1 cup red wine vinegar
1/2 cup sugar
Plastic wrap
2 lbs. ground bison
1/2 Tbsp. kosher salt
1/ Tbsp. fresh cracked pepper
1/4 tsp paprika
1/4 tsp chili powder
1/4 tsp garlic powder
2 Tbsp extra virgin olive oil
1 bag Fresh Express Bacon and Bleu Salad Kit
15 slider buns (preferably Hawaiian dinner rolls, cut in half)
1/4 cup favorite barbeque sauce
1/2 cup crumbled bleu cheese

PICKLE THE RED ONION:
In a medium bowl, add the shallots, red wine vinegar and sugar. Stir until sugar is dissolved. Cover with plastic wrap and place in the refrigerator for at least 6 hours.

MAKE THE BURGERS:
Preheat grill. While grill is preheating, in a large bowl, add the ground bison, salt, pepper, paprika, chili powder and garlic powder. Mix until spices are fully incorporated with the bison.
Form into approximately 6-8 small patties. 
Once grill is hot, brush it with oil, and place the sliders on the grill. Cook for about 3 minutes on each side, depending on preferred doneness.
Once the burgers are cooked, place them on a plate and let them rest for 2-5 minutes.

MAKE THE SALAD:
While burgers are resting, place all salad ingredients in a large bowl and toss until salad is fully incorporated. 

ASSEMBLE THE BURGERS:
Place a small amount barbeque sauce on the bottom of the bun. Then add desired amount the salad and top with burger and a desired amount crumbled bleu cheese and pickled shallot. Place top bun on the slider, and repeat with remaining sliders.
