Asian Salad with Glazed Prawns

Seasoned noodles, glazed prawns and peppers finish our Fresh Express® Asian Kit™ Serves 4
Salad Ingredients:
1 pkg Fresh Express® Asian Kit™
1 cup roasted almonds
1 lb angel hair pasta, al dente & cooled
4 green onion stalks, chopped fine
1 red bell pepper, julienne
1 yellow bell pepper, julienne
1 Tbsp cilantro, chopped
16-20 prawns, uncooked
2 Tbsp extra virgin olive oil
1 tsp fresh ginger, minced
1 Tbsp lemon juice
1 Tbsp soy sauce
2 Tbsp seasoned rice vinegar

Dressing Ingredients:
2 Tbsp soy sauce
2 Tbsp sesame oil
2 Tbsp honey
2 Tbsp seasoned rice vinegar
Dress the Noodles:
In large salad bowl, mix dressing ingredients.
Add onion, peppers, & cilantro.
Add cooked noodles and almonds.
Toss & refrigerate until ready to serve.

Sauté the Prawns:
Peel, rinse, & dry the prawns.
In medium saucepan, heat olive oil.
Add prawns & ginger.
Sauté 2 minutes.
Add soy sauce, rice vinegar, & lemon juice.
Cook 3 more minutes over medium-high heat.

Make the Salad:
Place greens and salad ingredient packets into a large salad bowl & mix.
Divide dressed noodles onto 4 salad serving plates.
Divide greens & place in the center of each noodle plate.
Top each with 4 or 5 glazed prawns.
