There’s a time in the growing cycle of any crop when the plants are at their peak of flavor -- that’s when we harvest. Every crop is slightly different so every field needs to be carefully watched so that we harvest on just the right day. Cooler or warmer weather can affect plant growth and quality, and we might move our harvest a few days earlier or later. Coordinating our harvests is not a matter of following a formula. We are constantly checking the plants, monitoring the progress, growth and quality. As we get closer to harvest time, we check the crops daily to determine when the lettuces are at their peak of maturity and flavor. When we say “go”, harvesting kicks into gear to ensure that the lettuces are harvested and transported quickly so that you can enjoy the freshest salads possible.
